It all started with a science project…

In the spring of 2015 I was assigned a project in which I had to research and create a presentation on the Yacon Root. Yacon, as it so happened was a native plant to my fathers birth country of Peru which triggered even more interest in the subject. When i first started reading about the root I couldn’t even imagine where I would find this root, none the less figure out how to incorporate it into a recipe that was required as a part of the presentation. Turns out I could find it and I did incorporate it into my recipe and my cookies turned out to be the best cookies I have ever had. And the best part is they were gluten free, vegan, and sugar free!

Fast forward 5 years and I am proud to bring you the same delicious cookies, baked right in the heart of the Rocky Mountains. I hope that our cookies fill your heart with joy and satisfaction as much as they fill your stomach.
